Slow Cooker Tomato Soup

Flavor develops slowly. When liquid is reduced, roasted aromas are created with lots of herbs, the right spices, and a swinging spoon that stirs here and there. But slow is relative. For a soup, 25 minutes is slow. But they’re worth their weight in gold for a tomato soup. Here is my new favorite tomato soup recipe with the last tomatoes from my raised bed, which are just bursting with aroma and waiting to find a place in the hot pot. It’s worth the 25 minutes, I promise.

Makes 3-4 servings.
Preparation time: 25 minutes
Remove the stalk from the tomatoes and cut them into pieces. Finely dice the shallots and garlic and sauté in a little olive oil, then gradually add the tomatoes. Add the spices and herbs and simmer for about 20 minutes with the pan uncovered. Add the coconut milk and, if desired, a little more liquid and puree until creamy with the magic stick. Serve with bread and a dollop of whipped cream. Bon Appetit!
